    Jessica found this recipe online and wanted to try it. I’m so glad that she did because it was so easy and really good. I did make a couple of changes – we don’t care for smoked paprika, so I used regular. I also didn’t put the bell peppers in the slow cooker – instead I sauteed them on the side. We felt that all of the spices could have been doubled, so I have doubled them on the ingredient list.

    List of Ingredients




    FOR THE BEEF:
    2–3 lbs beef chuck roast
    2 tsp chili powder
    1 tsp salt
    1 tsp black pepper
    1 tsp cumin
    1 tsp smoked paprika [I used regular]
    1/2 tsp garlic powder
    1/2 tsp onion powder
    1 onion, sliced (I like sweet onions)
    1 green pepper, sliced [I put these on the side]
    1 red pepper, sliced [ I put these on the side]
    1 (4oz) can diced green chiles (don’t drain)

    FOR SERVING:
    Corn tortillas, heated
    Your favorite taco toppings: shredded lettuce, salsa, guacamole, cheese, sour cream, cilantro, etc.

    You can brown your roast in a pan with a little oil over medium heat, if you like.

    Put the meat into the slow cooker. Mix together the chili powder, salt, pepper, cumin, paprika, garlic powder, and onion powder. Sprinkle this over the roast. Top with the onions, bell peppers (if using), and the can of chiles. Cover and cook on LOW for 7-8 hours or HIGH for 3-4 hours (I prefer the LOW). The roast should be VERY tender – you want to be able to pull it apart with two forks.

    Shred and serve with the warmed corn tortillas and whatever toppings you like.

    Serves about 8.
