    I always think that breakfast sausage is a bit heavy for quiche – I’d call this a sausage and egg pie really. But it is very good and very easy.

    List of Ingredients




    1 uncooked pie crust in deep dish pie tin
    3/4 lb. sausage crumbled and thoroughly cooked
    1 1/2 cups shredded sharp cheddar cheese
    1/2 small yellow onion, diced and sauteed in sausage grease
    4 eggs
    1 cup half and half or whole milk
    1 t. dry mustard
    A good pinch of salt and a few grinds of pepper
    A few scrapes of nutmeg
    Paprika for topping the quiche

    Heat oven to 400F. Top the pie crust with the sausage, cheese, and onion.

    Mix the eggs, half and half, mustard, and the salt together [NOTE: The pepper always seems to stay on the bottom of the mixing bowl, so I always sprinkle a bit over the cheese/sausage mixture and then a little bit more on top after pouring on the egg mixture.] Pour over the sausage mixture and sprinkle with paprika.

    Bake for 15 minutes and then lower the oven temperature to 350F for another 35 minutes. Remove from oven and cool for 5-10 minutes before cutting and serving.

    Serves 6-8.
