    Kristin’s German Potato Salad

    List of Ingredients




    3/4 cup diced bacon
    1 cup chopped celery
    1 cup chopped onion
    3 tablespoons flour
    1 1/3 cup water
    2/3 cup cider vinegar
    1/2 cup sugar
    3 teaspoons salt
    1/2 teaspoon pepper
    8 medium cooked potatoes, sliced
    Fresh chopped parsley
    Sliced hard-boiled egg for garnish

    Recipe



    Heat oven to 350F. Grease a casserole dish. Add sliced potatoes.

    Cook bacon in large skillet. Drain the fat; but return a quarter cup of fat to the skillet. Add the bacon to the casserole dish. To the bacon fat, add celery and onion. Cook until tender. Blend in flour. Stir in water and vinegar. Cook stirring constantly until mixture is thickened and bubbly. Stir in sugar, salt and pepper. Poor mixture over cooked potatoes and bacon. Mix lightly. Cover and bake at 350 degrees for 30 minutes. When removed from oven, stir in parsley and top with hard-boiled egg slices.

    Serves 6-8.
