    I have never had an oven fry that I liked. When I saw these on eGullet, I thought that they looked really good. She sent me her directions and I had wonderful success with them. She says that she uses whatever potatoes she has on hand, but that time she used larger red skinned potatoes, so that's what I got.

    List of Ingredients




    Potatoes, peeled
    Olive Oil
    Salt

    Recipe



    Heat oven to 450F. Line a half sheet pan with parchment paper. Cut the potatoes into batons for fries (I used my French fry cutter - perfect) and place them in a bowl of cold water. You can do this up to the night before you are going to cook them. When ready to cook, drain and dry well.

    Toss the fries with a little olive oil and salt. Arrange on the baking sheet and place in oven for about 30-35 minutes, flipping the fries halfway through.

    Remove from oven when browned and crisp. Taste and salt again, if needed. Serve.

    Regarding servings: Mike and I finished an entire half sheet pan of these all by ourselves.
