    Linda's NoMeatloaf and Onion Gravy

    Recipe Introduction

    It's a good NoMeatloaf. I use either tomato sauce or onion gravy or mushroom gravy on top. Serves 4.

    List of Ingredients

    1/2 large cooking onion, minced sprinkle of nutritional yeast
    1 cup quick oats 2 tsp gf soy sauce
    1 red bell pepper, minced 1 tsp smoked paprika
    1 can sliced mushrooms, drained a touch of salt
    1 cup shredded carrots ½ tsp onion powder
    1 (15 oz) can kidney beans, drained, rinsed ½ teaspoon dry mustard
    1 (15 oz) can cannellini beans, drain, rinsed 1 tsp minced garlic

    ¼ to ½ cup tomato sauce
    ¼ to ½ cup onion gravy

    Recipe

    Preheat oven to 350F

    In a nonstick frying pan, cook the onion for a few minutes on medium-high heat until it begins to soften. Add the garlic, red pepper, mushrooms, and carrots and continue cooking for 5 to 8 minutes, or until the mushrooms are soft.

    In a medium bowl, mix together the kidney beans, cannellini beans, oats, nutritional yeast, soy sauce, paprika, black pepper, onion powder and dry mustard.. Add the cooked vegetable mixture to the bowl and stir.
    Separate in two bowls. Blenderize one until mushy.
    Add mushy to other bowl and stir.
    Knead together and push into parchment lined loaf pan.
    Pour on the onion gravy.
    Bake for 40 min.

    Pour on a tomato sauce, or bbq sauce,or ...
    Bake for 40 min.

    To make patties. Cut parchment paper in squares.
    Place one patty on each square.
    Bake until top is browned. Flip. Bake until top is browned.
    About 30 min on each side.


    Refrigerate this overnight. It sets MUCH better when it has had time to cool and set.

    Serve warmed with mashed taters, gravy and a green salad.

    My Onion Gravy: caramelize a huge cooking onion. In a bowl mix 2 cups water or broth, 2 TBSP soy sauce, 3 TBSP cornstarch (diluted in cold water or cold broth). Add to the onions, bring to a boil, simmer until desired thickness. Stir constantly.
    Pour gravy onto smashed potatos.

    Pour gravy onto potato wedges sprinkle with nooch = poutine :D
