    Fettucine Alfredo (the easy way)

    Recipe Introduction

    NOTE: This recipes comes from Alfredo's di Roma at Disney's Epcot, which was a branch of the restaurant in Rome, Italy. It recently closed and is changing stewardship. Fettucine Alfredo doesn't get any easier than this.

    List of Ingredients

    1 pound fettucine noodles (I like Barilla)
    1/2 pound European style butter
    1/2 cup Parmesano Regiano (for parm nothing else will do; under NO circumstance use the stuff in the green can for this), grated
    Generous dash of nutmeg (yes, I use the stuff in the can; I'm lazy)

    Recipe

    1. Cook noodles according to package directions and personal taste.

    2. Meanwhile, gently melt butter. Do not let the solids separate out from the fat.

    3. Once butter is just melted, whisk in cheese and continue to whisk until smooth and creamy (and you have Popeye biceps). Remove from heat and whisk in nutmeg.

    4. Drain cooked pasta and toss with sauce. Serve with fresh ground pepper and additional parm reg.

    Serves 4
