    Smoked Salmon Fettucine Alfredo

    List of Ingredients

    12 oz. fettucine, uncooked
    1 tablespoon butter
    1 clove garlic pressed (I used the jar stuff that's already minced)
    1 tablespoon all-purpose flour
    1 cup 1% lowfat milk
    1 cup Parmesan cheese, grated
    1/3 cup light sour cream
    1 tablespoon fresh dill
    8 oz. smoked salmon, cut into small pieces (I just tore mine into bite-sized bits)
    2 tablespoons capers (I drained and rinsed mine)

    Recipe


    1. Cook fettucine according to package directions. If done before sauce, drain and keep warm until sauce is ready.

    2. Meanwhile, melt butter in saucepan over low heat. Add garlic; cook 1 minute.

    3. Add flour, stirring constantly. (I let mine cook a bit to kill the raw flour taste). Gradually stir in milk; cook stirring constantly, until thickened.

    4. Add Parmesan cheese; cook and still until cheese melts. Remove from heat and stir in sour cream and dill.

    5. Place drained pasta in large bowl; add salmon, capers, and sauce. Toss well; serve immediately.

    Serves 6
