    Spinach Manicotti

    12 manicotti shells
    1 carton ricotta cheese
    2 cups shreddded mozzarella
    1 pkg. frozen chopped spinach, thawed and thoroughly drained
    1/2 cup parmesan cheese
    garlic powder
    black pepper, to taste
    chopped fresh parsley or parsley flakes
    2 egg whites
    spaghetti sauce of your choice- about 2-1/2 cups

    Recipe

    Boil manicotti shells about 6 minutes; drain and let cool until you can handle them. In a bowl, combine the ricotta, 1 cup of the mozzarella, the spinach, the parmesan, garlic, black pepper,parsley, and egg whites. Mix until thoroughly combined. Meanwhile, spread one cup of the spaghetti sauce in the bottom of a casserole dish. Stuff the manicotti shells with the cheese mixture- I find using a plain table knife is the easiest way- just scoop some of the mixture onto the knife, and stuff one end; turn it around and stuff the other. Place the stuffed shells on top of the sauce in the pan. Continue until all shells and stuffing are used. Pour the remaining sauce over the top of the shells; top with the remaining mozzarella. Cover and bake at 350 for 30 minutes; uncover and bake another 5 minutes.

    *note* I used meat in my sauce over the top , because dh prefers it; but it's also very good plain. Mushrooms would also be delicious!
