    SWISS BEAN CASSEROLE


    2 tbsp. chopped onion,
    1/3 c. butter or margarine,
    1/3 c. all-purpose flour,
    1 tsp. salt,
    1/2 tsp. white pepper,
    /2 tsp. ground mustard,
    c. milk,
    1-1/2 c. (6 oz.)shredded Swiss cheese,
    1 pkg. (16 oz.) frozen Frence-style green beans (thawed and drained),
    1/4 c. slivered almonds (toasted)

    Recipe




    In a large saucepan, saute onion in butter until tender.

    Stir in the flour, salt, pepper and mustard until blended.

    Gradually add milk.

    Bring to a boil; cook and stir for 2 minutes or until thickened and bubbly.

    Reduce heat to low; stir in cheese just until melted.

    Stir in beans until coated.

    Transfer to a greased 2 quart baking dish.

    Sprinkle with almonds.

    Bake, uncovered, at 350 degrees for 25 to 30 minutes or until bubbly.

    Yield: 6 to 8 servings.
