Peach Custard Dessert
1 cup all purpose flour
2 tbspns sugar
1/4 tspn salt
1/8 tspn baking powder
1/4 cup margarine
11/2 cups sliced peaches/ about 3 medium
1/3 cup sugar
1 tspn cinnamon
2 egg yolks
1 cup whipping creamRecipe
Heat oven to 400°. Mix together flour, salt, b.powder and 2 tbspns sugar. Cut in the butter until it looks like fine breadcrumbs. Press the mixture firmly in the bottom, and up the sides, of an ungreased square 8x8x2 pan.
Spread peaches over base. Mix the 1/3 cup sugar with the cinnamon and sprinkle over. Bake 15 minutes.
Beat egg yolks and 1 cup cream until smooth and pour over peaches. Bake a further 25-30 mins until custard is set and edges are light brown.
Serve warm with topping of choice. Store in refrigerator.
