    Sweet Potato Pie


    1 piecrust (see recipe below) for a 9-inch pan
    2 large sweet potatoes
    3 eggs
    1 teaspoon vanilla
    1/3 cup sugar
    1/3 cup brown sugar
    1 teaspoon grated orange zest
    1 teaspoon ground ginger
    1 teaspoon cinnamon
    1/2 teaspoon nutmeg
    1/4 teaspoon allspice
    1/4 teaspoon cardamom
    1/4 teaspoon salt
    1/4 cup heavy cream
    1/2 cup half-and-half

    Preheat oven to 400° F. Pierce potatoes several times with the tines of a fork and roast them on a baking sheet in the oven until tender, about 50 minutes. Set aside to cool. Cut potatoes in half lengthwise; scoop out the pulp into a bowl and discard the skins. Mash the potatoes and set aside.

    Lower oven to 350° F. In a large bowl, beat the eggs, vanilla, and both sugars together until light and fluffy. Add the mashed sweet potatoes, orange zest, ginger, cinnamon, nutmeg, allspice, cardamom, and salt and combine well. Stir in the cream and half-and-half then pour the filling into the prepared 9-inch pie pan. Bake for about 40 to 45 minutes or until the filling is set.

    Serves 6 to 8
