    A Sunday Afternoon Snack


    1 package english muffins split
    Helmons Mayonaise
    Several ripe garden tomatoes thinly sliced
    1 1b of center-cut bacon fried in skillet *
    2 large vidalia onions chopped
    shredded sharp cheddar cheese

    Recipe




    Preheat oven to 375 degrees.

    Line english muffin halves on cookie sheet and spread each half with a generous helping of mayonaise.

    Next, sprinkle a generous helping of chopped vidalia onion and shredded cheddar on each muffin slice.

    Next, layer the muffin halves with tomato slices and sprinkle a bit more cheddar cheese.

    Next, top each muffin half with the bacon slices. (Just take the hot bacon directly from the frying pan and fold over each of the muffin slices.

    * Also, fry the bacon until nicely cooked and sizzling but NOT crispy as it will crisp up in the oven.

    Finally, bake in a 375 degree oven for 10-15 minutes until very hot and serve with the remaining chopped vidalia onions on the side and a glass of fresh iced tea.
