    Waffle Iron Brownies

    1 cup sugar
    1/2 cup butter or margarine
    2 eggs, well beaten
    1 t. vanilla
    2 squares chocolate, melted (see note)
    1 1/2 cups flour
    1 t. baking powder
    1/2 cup milk
    1 cup chopped nuts, optional

    Recipe




    Preheat and grease waffle iron.

    Cream sugar and butter.

    Add eggs and chocolate.

    Stir in vanilla.

    Sift dry ingredients in another bowl and add to mixture alternately with milk.

    Add nuts.

    As for regular waffles (low-medium)-heat setting, drop a large tablespoonful of batter for each section and bake like waffles.

    Note:

    one square of chocolate is one ounce.

    Substitute unsweetened baking chocolate: Combine 3 tablespoons cocoa powder with 1 tablespoon of butter, margarine or vegetable oil.

    This will make the equivalent of 1 ounce of unsweetened baking chocolate.

    Substitute semisweet Chocolate:

    9 tablespoons cocoa, 7 tablespoons sugar, 3 tablespoons shortening.

    This will make the equivalent of 6 ounces of semisweet chocolate. Do not use in chocolate chip cookies as this is not in chip form.


    Substitute sweet Baking Chocolate:

    4 tablespoons + 2 teaspoons sugar, 4 tablespoons cocoa, 2 tablespoons + 2 teaspoons vegetable shortening.

    Again, do not use in a chocolate chip type cookie as this is not in chip form.

    This will make the equivalent of 4 ounces of sweet baking chocolate.
