    Walnut and Banana Brownie


    1 1/2 cups smashed bananas ( 2 to 3 large bananas)
    5 ounces unsweetened chocolate (5 squares)
    11 tablespoons unsalted butter (5 1/2 ounces)
    4 large eggs
    1/2 teaspoon salt
    2 cups sugar
    1 1/2 teaspoons vanilla
    1 1/4 cups plus 2 tablespoons all purpose flour
    3/4 teaspoons baking powder
    1 cup walnut halves broken into smaller pieces

    Preheat the oven to 375.

    Over a hot water bath melt the chocolate and butter together. Once the mixture is melted remove from the heat and set aside to cool. Line the bottom of a 13 by 9 by 2 inch baking pan with parchment paper.

    In the bowl of a mixer, or by hand, whip the eggs, salt, sugar and vanilla until thick and pale yellow in color. Fold in the melted chocolate and butter and then the bananas. Combine the flour and baking powder and fold into the wet ingredients. Finally fold in the walnuts.

    Pour the batter into the prepared baking pan and smooth over the top. Bake for 20 to 25 minutes or until the middle springs bake when lightly pressed.

    Cool on a wire rack. Loosen the edges of the brownie from the pan. Flip the brownie over onto the back of another baking sheet and remove the parchment paper. Reinvert onto the first baking sheet and cut into 2-inch squares.
