    Old-Fashioned Pecan Fudge


    1-1/3 cups whole milk
    4 ounces semi sweet chocolate
    4 cups sugar
    2 tablespoons white corn syrup
    1/2 teaspoon salt
    1/4 cup butter (not margarine)
    4 teaspoons pure vanilla extract
    2 cups chopped pecans

    Recipe




    In a heavy 3 quart sauce pan, combine the milk and chocolate. Stir over low heat until the chocolate is melted. Do not allow the mixture to boil. Stir in the sugar, corn syrup, and salt. Cook slowly, stirring, until the sugar is dissolved.

    Increase the heat to medium and bring the mixture to a boil. Continue cooking until the temperature reaches 234 degrees on a candy thermometer (soft ball stage). Using a pastry brush dipped in water, wash down the crystals from the side of the pan from time to time during cooking.

    Remove the mixture from the heat and let cool to luke warm (about 110 degrees) without stirring or jarring the pan.

    When cooled, add the butter and vanilla. Beat vigorously with a wooden spoon until the mixture is dull in color,(about 7 or 8 minutes. Stir in the pecans. Pour the mixture into the prepared pan and spread it evenly with a rubber spatula. Let cool completely. When firm, cut into 1-1/2-inch squares.
