Butter Bean Soup
1 lb. dried butter beans, soaked overnight
1 cup diced lean ham or turkey ham
2 stalks celery, chopped
1 large onion, chopped
1 1/2 tbsp fresh thyme (2 tsp dried)
6 cups low-sodium chicken broth
4 cups water
Salt and pepper to tasteRecipe
In a large pot or Dutch oven, combine all ingredients, bring to boil then reduce heat and simmer 1-2 hours, until beans are soft.
Garnish with chopped parsley or chopped tomatoes.
