    Shaped-Tinker's Coconut Cookies

    1 cup butter
    1 cup sugar (plus optional)
    1 egg
    1 teaspoon baking soda
    2 cups flour
    1 teaspoon cream of tartar
    1/2 teaspoon vanilla
    1/2 teaspoon coconut extract
    1 1/4 cup sweetened coconut

    Recipe



    Toast the coconut in a 350 degree oven until it is an even golden color. Stir it every couple of minutes to toast evenly and prevent burning around the edges..takes about 10 to 12 minutes but watch it VERY carefully because it burns EASILY. Cool some.

    Melt butter and mix with sugar, egg, and baking soda in a large mixing bowl. Allow the mixture to stand for 10 minutes.

    Add 2 cups flour, cream of tartar, toasted coconut, and extracts to the mixture. Mix thoroughly. Allow the cookie dough to sit for a few minutes to make it easier to work with. Drop by rounded teaspoon on lightly greased cookie sheets. (Optional roll the teaspoon of dough into a ball and roll in a small amount of granulated sugar). Bake at 350 degrees for 8 to 10 minutes. Makes about 45 cookies.
