    Recipe Introduction


    Serves 2. If you don't want to have this on toast then top your mushroom risotto with it, or have it with arancini on the side. Or try it over beetroot pasta. Or seriously? Any way you have it you will love it.


    List of Ingredients


    • 1 avocado
    • 3/4 cup fresh or frozen peas
    • water
    • salt
    • lemon juice
    • 1-2 tbs finely chopped kale or spinach (optional)
    • pepper
    • olive oil (optional)


    Instructions


    1. Boil salted water and cook peas and kale for about 1 minute until bright green. Drain and refresh with cold water.
    2. Mash with salt, pepper, lemon juice and oil. Mash the avocado onto it.
    3. Serve over soy lin gluten free bread (or however you like)


    Final Comments


    If it is a special occasion and you want it to be a bit posh then garnish with any of the following snowpea sprouts,fresh basil or coriander, rocket, cherry tomatoes, fresh tomato salsa, mint leaves.

    Instead of lemon juice you could add in a tablespoon or two of your best vegan pesto. Also very yummy!
