    Death by Chocolate Muffins

    Serves 16

    A dark, rich and decadent chocolate muffin with bits of chocolate in each bite

    List of Ingredients






    2 cups all purpose flour

    1 cup cocoa powder, sifted

    2 1/2 tsp baking powder

    1/2 tsp baking soda

    1/2 tsp salt

    2 eggs plus 1 egg yolk

    3/4 cup sugar

    1/2 cup brown sugar

    1/2 cup vegetable oil

    1 1/2 cups fat free greek yogurt (you could also use sour cream)

    1 tbsp. vanilla extract

    1/4 cup white chocolate chips

    1/4 cup dark chocolate chips, or a bar chopped up in small pieces

    1/2 cup semi sweet chocolate chips, I used mini chips

    Plus 1/2 cup additional chips of your choice for the topping

    Preheat oven to 375
    Line 16 muffin tins with paper liners of your choice
    In a medium bowl whisk together flour, cocoa powder, baking powder, baking soda & salt and set aside
    In the bowl of a stand mixture fitted with a whisk attachment whisk egg and egg yolk
    Slowly add in sugars until mixture is thick and light yellow, scraping down the sides as necessary
    Add in oil, yogurt and vanilla mixing until well combined
    Slowly add in flour mixture, mixing until just combined
    Fold in chocolate
    Using a large cookie scoop, or ice cream scoop, scoop batter into prepared tins, filling them up
    Sprinkle some chips on top of each muffin
    Bake for 10 minutes and then reduce oven temperature to 350 and bake for an additional 10 minutes, or until a toothpick comes out clean when inserted into the center
    Remove and let cool in pan for 5 minutes and then let cool on a wire rack
    ENJOY!!
