List of Ingredients
Bulk pork sausage 1 Pound , broken into small chunks
Water 4 Cup (64 tbs)
Onion 1 Large , roughly minced
Purple hull peas/Chowder peas 2 Cup (32 tbs)
Salt To Taste
Hot sauce 1⁄4 Cup (4 tbs)
Steamed rice 2 Cup (32 tbs)

In a Dutch oven, lightly brown the sausage and drain.
Do not over brown the sausage, as that will render all of the fat and most of the flavor.
Add the water, onion, and peas.
Bring to a boil, cover and simmer for 30 to 40 minutes.
Remove the lid and simmer, stirring occasionally, until the pot liquor thickens.
Add salt and hot sauce to taste.
Serve over steamed rice with corn bread.
