    I went looking for a recipe for hot cocoa mix that wasn't based on coffee creamer and found this one online. It is delish and would make a great Christmas gift. It was recommended to use Nido whole-milk powdered milk - the instant-mix kind. You can find this in the Hispanic section of some grocery stores. I couldn't find it so I ordered a 4-pack from Amazon. This tastes just like cocoa made from scratch. You can vary the taste according to the cocoa you use. Dutch process cocoa will be mellower, but I used the higher fat dark cocoa. Oh....the person who posted the recipe said don't be tempted to omit the cayenne.

    List of Ingredients




    2 c powdered sugar
    1 c cocoa
    2.5 cups powdered milk
    1 t salt
    2 t cornstarch
    a pinch of cayenne

    Recipe



    Combine all incredients in a mixing bowl and incorporate evenly. Store in a sealed container. Keeps indefinitely in the pantry. You can also make it with warm milk. Makes 5 1/2 cups of dry mix.

    To make cocoa, fill a mug half full of mix and pour in hot water. Stir to combine.
