RECIPE INTRO: Every morning it's the same thing, "Mommy, I want a hot breakfast." Luckily, I spotted this recipe just today in Better Homes and Gardens. I plan to make it tomorrow. (F.Y.I. - If I can't find steel-cut oats, I'm just going to substitute more regular rolled oats. Since this cooks for a total of 40 minutes, I plan to save on my prep-time. Tonight, I'm going to measure out the dry ingredients into a big bowl. The sugars will go into another bowl. Both bowls will be covered with plastic wrap.)
List of Ingredients
2-1/2 cups regular rolled oats
1/4 cup oat bran
1/4 cup steel-cut oats
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
2 cups milk
1 egg, beaten
1/3 cup applesauce
1/4 cup cooking oil
1/4 cup granulated sugar
1/4 cup packed brown sugar
2 cups fresh fruit
(such as blueberries; chopped strawberries; apples or pears -cored, peeled and chopped; 4 ripe mashed bananas; cranberries or 1 cup dried fruit(such as raisins, cranberries or figs.
Plain or vanilla yogurt, milk or cream
Recipe
Preheat oven to 400°F. Lightly grease 2-quart souffle dish. In large bowl, combine first 6 ingredients; set aside. In medium bowl, combine next 6 ingredients. Add to oat mixture and stir until just combined. Place mixture into baking dish. Bake uncovered for 20 minutes. Stir mixture and gently fold in fruit. Bake, uncovered, for 20 minutes more or until top is lightly browned. Spoon into bowls. Serve with yogurt, milk or cream. Makes 6 to 8 servings.
