Zucchini Peanut Butter Cookies

List of Ingredients

1 1/2 C All-Purpose Flour
1/2 C Crunchy Peanut Butter
1 C Unpared Zucchini -- Grated
1 Tsp Baking Soda
1/2 C Margarine
1/2 C Brown Sugar
1/2 C Granulated Sugar
1 Whole Egg -- Beaten
1 Tsp Vanilla
1 C Roasted Peanuts -- Chopped
1/2 C Chocolate Bits


Recipe

1. Cut peanut butter into flour.
2. In another bowl, thoroughly combine zucchini, soda, sugars and margarine.
3. Add egg. Combine with flour mixture and add vanilla.
4. Stir in peanuts and chocolate bits.
5. Chill dough two hours or longer.
6. Drop by teaspoons onto greased baking sheet.
7. Bake at 375°F for 12-15 minutes.
