List of Ingredients
3 1/2 cups all-purpose flour
1/3 cup packed brown sugar
1 tablespoon plus 1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1 cup oats, regular or quick-cooking uncooked, divided use
1/2 cup (1 stick) margarine or butter
1 1/2 cups pecans, chopped
1/2 teaspoon maple flavor
1 1/2 cups plus 2 tablespoons buttermilk, divided useRecipe
Preliminaries: Preheat oven to 450 degrees.
1.In large bowl, mix flour, brown sugar, baking powder, salt, baking soda and oats (reserving 2 tablespoons of oats for garnish). With pastry blender, cut in margarine until mixture resembles coarse crumbs. Stir in pecans.
2. Add maple extract to 1 1/2 cups buttermilk; stir into flour mixture.
3. Turn dough onto lightly floured surface; knead 6-8strokes. With floured rolling pin, roll dough 1/2 inch thick (if dough is too sticky to roll out, you can drop onto baking sheet). With floured 3-inch biscuit cutter, cut out biscuits. Press trimmings together; repeat to make 20 biscuits in all. Place biscuits about 1 inch apart on ungreased, large baking sheet. Brush biscuits with remaining 2 tablespoons of buttermilk; sprinkle with reserved oats.
4. Bake biscuits 12-15 minutes until golden brown. Yield: 20 scones.
