Zucchini Muffins

1 1/4 cups flour
2/3 cup packed brown sugar
2 teaspoons cinnamon
1 teaspoon baking powder
1/2 teaspoon baking soda
Pinch of salt
2 large eggs
1/3 cup vegetable oil
1 tablespoon vanilla
2 cups grated zucchini with peel (about 1 medium)
1/2 cup chopped walnuts or pecans (optional) Recipe
Preheat oven to 350°F. Line 12 muffin cups with paper or foil liners. Whisk the flour, brown sugar, cinnamon, baking powder, soda and salt in a medium bowl. In another bowl, whisk the eggs, vegetable oil and vanilla. Add the wet ingredients to the dry ingredients. Stir just until blended. Stir in zucchini and nuts, if using (batter will be very thick). Divide batter among prepared muffin cups. Bake until golden and a toothpick inserted in the center comes out clean, about 20 minutes. Turn muffins out onto rack and cool slightly. Makes 12.
