    1 recipe flaky pie dough, chilled (see recipe)
    1 cup light corn syrup
    3/4 cup dark brown sugar
    1/4 stick unsalted butter
    3 large eggs
    1 dash salt
    3 Tbs. dark rum
    2 cups walnut pieces

    Recipe



    Preheat oven to 400°F. Lightly flour work surface and dough;
    roll dough into 12-inch round. Fold dough in half; place in 9-inch glass pie pan. Unfold dough, and press firmly into pan. Fold excess dough under at edges of pan; flute edges. Combine corn syrup and brown sugar in saucepan; stir well to mix. Bring to a boil over low heat. Remove from heat. Add butter; let melt. Meanwhile, whisk eggs, salt and rum in large mixing bowl. Pour in corn syrup mixture in a stream, whisking constantly. Stir in walnuts. Pour into pie shell. Bake pie on lowest rack of oven about 45 minutes or until crust is well colored and filling is set. Let cool on rack. Refrigerate leftovers. Yield: 1 (9-inch) pie.

    Note: For a chocolate variation, add 4 ounces semisweet chocolate, broken up, along with the butter; whisk smooth before continuing.
