    1/2 cup chopped onion (1 medium)
    6 slices cooked bacon, chopped
    8 eggs
    1/2 cup dairy sour cream
    1/2 cup half-and-half
    1/4 teaspoon salt
    1/8 teaspoon white pepper
    Dash ground nutmeg
    3 cups lightly packed chopped fresh spinach
    2/3 cup shredded mozzarella cheese
    1/2 cup shredded Swiss cheese

    Prepare pastry for single-crust pie. Line the unpricked pastry shell with a double thickness of foil. Bake in a 450°F oven for eight minutes. Remove foil. Bake for four to five minutes more or till pastry is set and dry. Remove from oven. Reduce oven temperature to 325°F. Meanwhile, in a large skillet cook onion and bacon until onion is tender and bacon is crisp. Drain on paper towels.

    In a medium mixing bowl beat eggs slightly with a fork.
    Stir in sour cream, half-and-half, salt, pepper and nutmeg.
    Stir in onion mixture, spinach, mozzarella cheese and Swiss cheese. Pour egg mixture into the hot, baked pastry shell.

    Bake in the 325°F oven about 45 minutes or until a knife inserted near the center comes out clean. If necessary, cover edge of crust with foil to prevent over-browning. Let stand for 10 minutes before serving. Makes six to eight servings.
