    Grandma's Pumpkin Tea Bread

    1 cup pumpkin puree
    1 cup white sugar
    1/2 cup vegetable oil
    1 or 2 (1 1/2) eggs, depending on size (I cut this recipe in half)
    1 Tbl vanilla extract
    1 1/2 tsp almond extract
    1 1/2 tsp butter flavored extract
    1/2 teaspoon lemon extract
    1 cup all-purpose flour
    1/2 cup whole wheat flour
    1/2 tsp baking soda
    1/2 tsp baking powder
    1 Tbl ground cinnamon
    2 1/4 tsp nutmeg
    1 1/2 tsp ground cloves
    1/2 teaspoon ground mace
    * I would probably add some nuts - pok

    Recipe



    Preheat oven to 325°F. Lightly grease a 9x5" loaf pan. In a large bowl, cream together the sugar and vegetable oil. Stir in the eggs one at a time, beating well with each addition. Stir in the pumpkin puree, then stir in the extracts and flavorings. In a separate bowl, sift together all-purpose flour, wheat flour, baking soda, baking powder, cinnamon, nutmeg, cloves and mace. Stir flour mixture into pumpkin mixture; pour into prepared pan. Bake in preheated oven for 50 to 55 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Cool loaf in the pan for 15 minutes before removing to a wire rack to cool completely.
