List of Ingredients




2 cups unbleached all-purpose flour
1 cup whole wheat flour
1 tsp. baking soda
1 tsp. salt
1 Tbls. ground cinnamon
1 1/2 cup sugar
1/2 cup brown sugar
4 eggs, beaten
2 cups strawberries (fresh, chopped)
1 1/2 cup canola oil
1 1/4 cup chopped pecans or walnuts (plus a little extra for topping)
Demerara cane sugar (for topping)



Recipe



In medium bowl, sift the dry ingredients together (excluding the brown sugar). In a large bowl, combine the eggs, brown sugar, strawberries, and oil. Add the dry ingredients to the egg mixture and mix until blended. Fold in the nuts. Spoon into two greased 5x9" loaf pan. Sprinkle with cane sugar and a few chopped nuts. Bake in a 325°F. oven for about one hour.
