The only gravy I make -- vary it with beef stock, turkey stock, vegetable stock & chicken stock
Also known as diner gravy - only 5 ingredients + salt & pepper. You need to know how to make a roux, but other than that it's very simple.
A lady from another group added her two cents as to how she makes this:
*Brenda's notes: I use mushroom broth for the broth and change it up a bit with the addition of a couple drops of Kitchen Bouquet and a dash or two of Worcestershire sauce--plenty of freshly cracked black pepper, too. Yum.

Crater Gravy

3 tablespoons butter
3 tablespoons flour
1 can beef broth (15-oz.)
1 can cream of mushroom soup (10-3/4-oz)
3/4 cup water
Salt and pepper
In a large saucepan over medium heat, blend the butter and flour until golden brown roux forms. Whisk in the broth, a few tablespoons at a time, until the entire amount has been added. Reduce heat to low, add the soup and water and whisk ingredients together. Let gravy simmer at a gentle boil, stirring gently, until it is nice and creamy. Serve over mashed potatoes.
