Emeril's Pico de Gallo-Pam's Version

List of Ingredients
1 1/2 cups seeded, diced tomatoes (PLUM)
1/4 cup diced red onion (1/2 C YELLOW)
1 tablespoon diced jalapenos (1 1/2 T SERRANO PEPPERS)
1 tablespoon minced garlic
Juice of 2 limes (LEMONS-juice of 1 to start)
2 tablespoons cilantro, plus extra for garnish
Salt and pepper
Recipe
In a bowl combine all ingredients. GIVE A SHORT WHIRL IN THE BLENDER TO GIVE IT A LESS CHUNKY CONSISTENCY. About 2 cups.
