    Revitalizing Cabbage Soup

    1/2 stick butter
    1/3 cup grated Parmesan
    1 large onion, finely diced
    1/3 cup sour cream
    1/2 small cabbage, finely shredded
    1 bay leaf
    3 cups beef stock

    Recipe



    1.- Melt the butter in a pan, include the onion and sauté over low heat, or until soft. Add the cabbage and cook for 5 minutes. Then include the stock and bay leaf. Bring to the boil, then reduce the heat, cover and simmer for 20 minutes.
    2.- Flavor the soup with salt and pepper before spooning it into serving bowls. Top with a spoonful of the sour cream and sprinkle with the grated Parmesan. Serve with wide slices of fresh crusty bread.
