    HOLIDAY SWEET POTATO CROCK POT CASSEROLE

    Because it uses canned sweet potatoes, and you're likely to have on hand most, or all of the remaining ingredients, this inexpensive dish can be put together in the morning and forgotten until early afternoon serving time. Yummy!

    List of Ingredients




    2 cans (18 oz.) sweet potatoes, drained, mashed
    1/4 cup butter or margarine, melted
    2 TBSP. sugar
    2 TBSP. light brown sugar, packed
    1 TBSP. orange juice
    2 eggs, beaten
    1/2 cup milk
    1/2 cup chopped pecans
    1/2 cup light brown sugar, packed
    2 TBSP. flour
    2 TBSP. butter or margarine, melted

    Recipe



    Spray crock pot with non-stick cooking spray or lightly butter. Mix potatoes, butter, 2 TBSP. sugar, and 2 TBSP. brown sugar in large bowl. Beat in juice, eggs and milk. Transfer to crock pot. Combine pecans, brown sugar, flour, and 2 TBSP. butter. Spread evenly over potatoes. Cook on high 3 to 4 hours. Serves about 6.
