    MERINGUE SHELLS

    Source of Recipe

    Laurie’s Good Living

    Recipe Introduction

Really easy, though it will make you look like a culenary Hero. Can be used as a shell to serve fruit, puddings, pie fillings, ice creams with or without sauces, etc. It will really impress friends, church groups, and even your own family! Be sure you'll have one for each person though because everyone will want one!

    List of Ingredients

    4 egg whites
    pinch salt
    1 1/3 cups sugar
    1 tsp. vanilla extract
    1 tsp. lemon juice

    Recipe

Preheat the oven to 275° F. Line baking sheets with parchment paper or foil. Trace two 9 inch circles on parchment paper for pie shells, or trace ten 3 inch circles for individual shells. Beat egg whites and salt in a mixer until soft peaks form. Gradually beat in sugar, vanilla and lemon juice. Egg whites should look very smooth and glossy.

Using a pastry bag with a large tip, and a spoon and/or a spatula, fill circles with an even layer of meringue. Then build up sides until as high as desired. Bake about 1 hour (for either size), until crisp and dry. Turn off oven and allow meringues to remain in oven with door cracked open until completely cool. Store in an airtight container.

Fill with chosen fillings just before serving.
