    Lentil soup has been a cold weather favorite of mine for many years, and it's very healthy, too!

    List of Ingredients




    1/4 cup olive oil or margarine
    1 medium onion, diced small
    2 cloves garlic, minced
    3 carrots, diced small
    1-2 tsp salt
    1/2 tsp pepper
    2 Tbsp flour
    2 quarts water
    1 1-lb bag lentils
    1 cup country ham, diced

    Recipe



    Heat oil or margarine in 2-gallon saucepan. Add onions and carrots and cook about 5 minutes or until onions are translucent. Add salt, minced garlic, pepper and flour and stir until blended. Add water a little at a time, stirring until smooth, free of lumps and boiling. Add lentils, reduce heat and simmer about 1 hour. Stir often to prevent burning on bottom. Add ham and simmer 15-20 minutes more. Thin with water as necessary. Put leftovers in wide mouth pint freezer jars and freeze. Then, when you want it, just pour the frozen soup into a microwavable bowl and hit defrost. If you do not have a defrost setting on your machine, follow the manufacturer's instructions for defrosting. Then, warm to your liking.

    Note: I usually add one bay leaf to the pot, and remove it just before derving.
