    1 Serving Paupers Lasagna

    Eating Cheap - a cookbook by Peter Bendfeldt

    List of Ingredients


    • 5/8 cup spaghetti sauce *
    • 2 uncooked lasagna noodles *
    • ground sweet basil *
    • 1/2 cup your favorite shredded cheese. You can use sliced cheese instead of shredded. Cut each slice in half. Use 2 halves on each layer
    • * Available at most Dollar Stores


    Instructions


    1. Preheat oven to 350º.

    2. Oil a mini loaf pan (about 5.75 x 3 inches) Mini loaf pans can be purchased at iParty, AC Moore, Michaels and Big Y.

    3. Pour 1/8 cup spaghetti sauce into pan.

    4. Lay 1/2 of a uncooked noodle into pan. If noodle shatters, use pieces anyway.

    5. Spread 1/8 cup spaghetti sauce onto noodle.

    6. Sprinkle a little ground sweet basil onto sauce.

    7. Sprinkle 1/8 cup of shredded cheese onto basil & sauce.

    8. 2nd layer, repeat steps 4 thru 7.

    9. 3rd layer, repeat steps 4 thru 7.

    10. 4th layer, repeat steps 4 thru 7.

    11. Cover pan with aluminum foil and bake for 1 hour.

    12. Remove from oven and let cool uncovered for 10 minutes.

    13. CAUTION removing foil may release HOT STEAM.

    14. Lasagna may look strange when you remove foil. Run knife around inside edge of pan to release lasagna.

    15. Empty lasagna onto plate. It should look fine.
