    Source of Recipe

Eating Cheap - a cookbook by Peter Bendfeldt

    List of Ingredients

    • 1 cup water
    • 1 6.5-ounce can of chopped clams *
    • 1 chicken bouillon cube *
    • sprinkle of ground black pepper or your favorite ground pepper *
    • 1 tablespoon chopped onion
    • 1 medium peeled potato (you can use an unpeeled scrubbed potato)
    • Cut potato into small cubes to fill one cup.
    • Slightly more or less than 1 cupfull of potato cubes is OK.
    • 1/2 cup milk
    • 1 tablespoon all-purpose flour *
    • * Available at most Dollar Stores

    Instructions

    1. In a 1-quart saucepan combine water, clam broth (use just 1/4 cup of the clam broth drained from the chopped clams), bouillon cube, pepper, onion and potatoes. DO NOT ADD MILK & FLOUR at this time.

    2. Bring mixture to boiling, REDUCE HEAT, simmer covered 10 minutes.

    3. While chowder is cooking mix together milk and flour.

    4. After the chowder has cooked for the 10 minutes add the milk and flour mixture to it.

    5. Simmer for 5 more minute or until potatoes are tender.

    6. When potatoes are tender add just 1/4 cup of the chopped clams. Use the other 1/4 cup of chopped clams to make Clam Fritters.

    7. Serve. You do not need to cook the chopped clams.

    8. Use the extra clams and broth to make my Clam Fritters. Look in the BREAD Section for my Clam Fritter recipe
