    Recipe Introduction


    A perfect use for that cast-iron skillet!


    List of Ingredients


    • 1 cup Lamb's Stone Ground Corn Meal
    • 1 cup flour
    • 1 teaspoon salt
    • 2 eggs
    • 1/2 cup vegetable oil
    • 2 teaspoons baking powder
    • 2 Tablespoons sugar
    • 1 cup milk


    Instructions


    1. Preheat oven to 400 degrees F.
    2. Pout all ingredients in a bowl and mix with a fork until blended (about 50 strokes).
    3. Pour batter into a greased cast iron skillet. (Mine is the 8 inch and it works perfectly to create a crispy moist cornbread!)
    4. Place pan in oven and bake 30 - 35 minutes until fully baked. Top of cornbread will be slightly brown and firm to the touch.
    5. Grab a hunk or butter and slather it on. Mmmmmmmm!


    Final Comments


    This is great with chili or any soup...especially in the winter.
