    Recipe Introduction


    This recipe tastes so fresh from the very fresh juice that you have reamed from your very fresh grapefruit.


    List of Ingredients


    • 1/2 cup fresh grapefruit juice
    • 1 clove garlic, chopped
    • 2 teaspoons Dijon mustard
    • 1 sprig fresh tarragon
    • 1 cup olive oil
    • salt and pepper


    Instructions


    1. Using a citrus reamer, ream the juice out of your grapefruits. It will probably take 2 or 3 large grapefruit to yield 1/2 cup juice.
    2. In a medium mixing bowl, combine grapefruit juice, garlic, mustard and tarragon.
    3. Begin pouring olive oil in a thin, continuous stream to incorporate it into the juice mixture - whisking the entire time. If you do it this way, the dressing will not separate.
    4. Pour over salad. Eat.


    Final Comments


    This dressing is FANTASTIC with a lettuce salad containing fresh fruit and toasted nuts.
