    Recipe Introduction


    This is a healthy and quick dinner. Get the chef knife ready for some chopping!


    List of Ingredients


    • Bhutanese red rice (or the rice of your choice)
    • 2 1/2 teaspoons olive oil
    • 1 onion, chopped
    • 1 green pepper, chopped
    • 1 rib celery, chopped
    • 1/4 pound smoked sausage, diced
    • 2 16-ounce cans diced tomatoes w/ garlic and basil
    • 1 can kidney beans
    • 4 garlic cloves, chopped
    • bay leaf
    • 1 teaspoon dried thyme
    • 1 teaspoon Tabasco
    • 1/2 pound medium shrimp, peeled and deveined
    • salt, to taste


    Instructions


    1. Make rice according to package directions.
    2. In olive oil, cook onion, celery, green pepper and sausage. Saute 8 minutes.
    3. Add remaining ingredients.
    4. Cook until heated through.
    5. Serve over rice.


    Final Comments


    I usually make this early and let it simmer awhile. Better the second day after the party in the pot!
