    2 slices of white sandwich bread
    1/3 c. buttermilk
    3/4 pound 80% lean ground beef
    1/4 pound ground pork
    1/4 c. Parmesan cheese
    2 T minced fresh parsley
    1 large egg yolk
    1 clove of garlic (minced)
    salt and pepper
    vegetable oil

    Remove and discard crusts from bread and then tear into small pieces.Add the buttermilk and mash to a smooth paste using a fork.Add everything else except oil.Stir gently until combined and uniform.Gently form 1 1/2 inch round meatballs.Pour the oil into a 12 inch skillet until it measures a depth of 1/4 inch.Heat over medium-high heat until shimmering.Add the meatballs in a single layer and cook until nicely browned on all sides (about 10 minutes).Transfer to a paper-towel-lined plate.Discard oil.Pour sauce into pan and scrape browned bits to add flavor.Add meatballs and cook about 5 minutes (more if desired).
