    Ginger Spicy Chicken

    2 whole chicken breasts, split, boned and skinned
    salt as desired
    2 tbsp vegetable oil
    1 medium red pepper, but into 1/4 x 2" strips
    1 medium green pepper
    1 (8oz) can juice pack pinnapple chunks (undrained)
    1/2 picante sauce
    2 tbsp chopped fresh cilantro or parsley
    2 to 3 tsp. grated fresh ginger

    Lightly salt chicken. Cook in oil over medium heat until lightly browned and cooked through, about 5 minutes. Remove and reserve. Add peppers, pineapple, picante sauce, cilantro, and ginger to skillet; cook, stirring frequently, 5 to 7 minutes or until peppers are tender and sauce is thickened. Return chicken to skillet; heat through. Serve over rice. Makes 4 servings.
