Wild Rice and Wild Mushroom Soup

1/2 cup wild rice
2 cups water
1/2 tsp salt
2 Tbsp butter
1 yellow onion finely chopped
1 celery stalk finely chopped
1/2 cup dry white wine
1 # fresh mushroom Mixed wild and button
4 cups chicken or vegetable stock
1/2 cup heavy cream
fresh ground pepper
1 tbsp chopped fresh parsley
Recipe
Rinse wild rice; add 2 cups water and bring to boil. Cover and cook
until all water has been absorbed.
In a soup pot over medium heat, melt butter. Add the onion, celery
and saute, stirring occasionally until soft, about 10 minutes.
Raise to med high, add wine and cook until reduced to about 2 Tbsp;
3-4 minutes.
Reduce the heat to medium, add the fresh mushrooms and saute, stirring
occasionally, until the mushroooms wilt, about 15 minutes. Raise the
heat to high, add the stock and bring to a boil. Reduce heat and cook
uncovered until the mushrooms are very soft, about 20 minutes. Add
the wild rice, the cream and simmer for 5 minutes longer to blend the
flavors. Season with salt and pepper. Ladle the soup into warmed
bowls and garnish with the parsley. Serves 6
