MOIST PUMPKIN MUFFINS

Recipe Introduction
Makes 3 dozen. The vegetable oil makes these moist and light. They are so easy to make because you just throw everything into a big bowl and mix well.
List of Ingredients
4 eggs
2 C White sugar
1-1/2 C Vegetable oil
1 can Pumpkin (14 oz)
3 C All purpose flour
1 tbsp. Cinnamon
2 tsp. Baking soda
2 tsp. Baking powder
1 tsp. Salt
2 C sultana raisins or 1 cup each raisins/nuts Recipe
In large bowl, beat eggs well. Add sugar, oil and pumpkin to eggs and mix well. Add remaining ingredients and combine well. Bake 15 minutes in 400 F oven.
