Pumpkin Muffins

2 c. AP flour
2/3 c. firmly packed brown sugar
1/3 c. white sugar
1 T. baking powder
1 t. salt
1 t. ground cinnamon
¼ t. baking soda
¼ t. ground ginger
½ c. butter
1/3 c. buttermilk
2 eggs, slightly beatenRecipe
Preheat oven to 400°. Stir together all dry ingredients (except butter, pumpkin, buttermilk and eggs) in a large mixing bowl. Stir together the wet ingredients then add all at once to the dry ingredients, stir just until moistened.
Spoon into prepared muffin tins (makes 12 2.5 inch muffins) and bake for 15-20 minutes (until toothpick inserted in the center comes out clean). Cool for 5 minutes and serve.
