Pressure Cooker Chicken

2 whole chicken breasts (12 oz. each)
3 Tbsp. lemon juice
1/4 cup prepared mustard
1 Tbsp. chopped parsley
1 tsp. tarragon
1/2 tsp. garlic powder
1/2 tsp. salt
Pinch of pepper
1 lemon, thinly sliced

Recipe
1.Skin and bone chicken breasts; cut in half.
2.Mix 2 Tbsp. of the lemon juice, mustard, parsley, tarragon, garlic powder, salt and pepper; coat chicken with this mixture.
3.Arrange chicken in a 1 1/2-qt. heatproof bowl. Top with lemon slices and sprinkle with remaining lemon juice and paprika.
4.Pour 1 1/2 cups water into cooker. Place bowl on rack in cooker.
5.Cover, set control at 10 and place over high heat until control jiggles. Reduce heat and cook 15 minutes (or cook at 15 lbs. pressure for 12 minutes).
6.Remove from heat and let cool 5 minutes; then run cold water over the cooker to finish reducing pressure.
Serves 4 (6-8 qt. cooker). A 2 1/2 or 4-qt. cooker can be used if your bowl fits; use 1 cup water in Step 4.
