List of Ingredients
1lb fresh chestnuts
3/4 pint vegetable stock
1lb Brussels sprouts
1lb carrots
2 Tb. butter
salt & freshly ground black pepper
Recipe
Peel the raw chestnuts, leaving the brown papery skins intact. Bringing a small pan of water to the boil, drop the chestnuts into water for a few minutes, remove with a slotted spoon. the skins will slip off easily.
Put the peeled chestnuts in a pan with the stock. Cover, bring to boil. Simmer 10 minutes. Drain.
Peel & trim the sprouts. Boil in salted water 5 minutes. Drain.
Cut carrots in 1/2" diagonal slices. Put them in pan with cold water to cover, bring to boil, simmer 6 minutes. Drain. Melt butter in clean pan; add the chestnuts, sprouts & carrots, season. Serve hot.
