    Beef Stew II
    · 3 Carrots, cut up
    · 3 Potatoes, cut up
    · 2 lb Beef chuck or stew meat in
    · -1 1/2 inch cubes
    · 1 c Water or beef stock
    · 1 t Worcestershire
    · 1 Garlic clove
    · 1 Bay leaf
    · Salt to taste
    · 1/2 ts Pepper
    · 1 t Paprika
    · 3 Onions, quartered
    · 1 Celery stalk, cut up
    Put all ingredients in crock pot in order listed. Stir just enough to mix
    spices. Cover and set to low for 10-12 hours. (High 5-6 hours)




    Mediterranean Stew
    · 1 Eggplant -- chopped
    · 2 Zucchini -- chopped
    · 1 Red or green bell pepper -- seeded/chopped
    · 1 Onion -- chopped
    · 3 large Tomatoes -- chopped
    · 2 cans Garbanzo beans -- (14 oz.) drained/rinsed
    · 1 can Artichoke hearts packed in Water -- (14 oz.)
    · Drained/quartered
    · 1 tablespoon Oregano
    · Freshly ground black pepper
    · Salt
    · Crushed red pepper flakes, to taste
    · 1 package Egg noodles -- cooked
    Add all ingredients except noodles to the crock pot and stir well. (Sometimes
    I also add a Tbsp. of tomato paste for a thicker stew.) Cook on low for 8
    hours. Serve over the cooked noodles.




    Peruvian chicken stew with sweet potatoes


    1 1/2 pounds chicken thighs, on the bone, with skin removed
    1 yellow onion, halved lengthwise and thinly sliced crosswise
    6 cups water OR canned chicken broth
    1 teaspoon salt
    1 teaspoon ground cumin
    1 cup dry-roasted, unsalted peanuts, ground medium-fine (optional)
    1/2 cup yellow cornmeal
    1/8 teaspoon ground allspice
    1 pound sweet potatoes, peeled and cut into quarter-inch sticks 2 inches long
    1/2 cup cilantro

    Add onion to pot and sauté over low heat until softened, about 10 minutes;
    do not let onion brown. Place chicken thighs to pot. Add water, salt and
    cumin. Bring to a boil. Lower heat and simmer,
    uncovered, until chicken is very tender, 30-40 minutes. Stir in ground
    peanuts, cornmeal and allspice and cook 15 minutes, scraping bottom of pot
    occasionally to prevent scorching. Stir in sweet potato sticks and cook 15-20 minutes
    or until sweet potato is tender and mixture is very thick. If you like the
    flavor of cilantro, stir that in just before serving. Spoon stew into serving
    bowls.





    V 8 Stew
    Combine all together and bake at 300 for 4 hours. Can also cook
    In crockpot at high for 10-12 hours:

    2 1 / 2 Cups V-8 Juice
    1 1/ 2 # Stew Meat
    2 T. Sugar
    2 T. Dry Tapioca
    cut the following into bite size pieces and add:
    3 carrots
    4 potatoes
    3 stalks celery
    1 large onion
    salt and pepper
