    If you love meat loaf, you won't ever find a better recipe than this one!

    List of Ingredients




    BROWN SUGAR-KETCHUP GLAZE
    1/4 cup ketchup
    2 Tablespoons light or dark brown sugar
    2 teaspoons cider or white vinegar

    MEAT LOAF
    2 teaspoons vegetable oil
    1 medium onion chopped
    2 garlic cloves, minced
    2 large eggs
    1 teaspoon dried thyme leaves
    1 teaspoon salt
    1/2 teaspoon ground black pepper
    2 teaspoons Dijon mustard
    2 teaspoons Worchestershire sauce
    1/4 teaspoon hot red pepper sauce
    1/2 cup milk
    1 pound ground chuck
    1/2 pound ground veal
    1/2 pound ground pork
    2/3 cups quick oatmeal
    1/3 cup minced fresh parsley leaves
    8-9 slices of bacon (I prefer the thick sliced)

    Recipe



    For Glaze mix all ingredients in a small bowl; set aside.

    Preheat oven to 350 degrees. Heat oil in a medium skillet. Add onion and garlic. Saute until softened, about 5 minutes, set aside to cool.

    Mix eggs with thyme, salt, pepper, mustard, Worchestershire, pepper sauce and milk. Add egg mixture to meat in a large bowl, along with oatmeal, parsley and cooked onions and garlic; mix with your fingers very gently (do not overwork the meat) until evenly blended and meat mixture does not stick to bowl.

    Form meat into a loaf on top of broiler pan (so meat loaf won't sit in fat). Pour glaze on top of loaf.

    Microwave the bacon so that it is about 1/2 done (don't let it get crispy). Place strips of bacon, crosswise over loaf and tuck them under to prevent curling. (If your bacon is not long enough to tuck under fasten the ends with toothpicks)

    Bake loaf approx 1 hour. Cool for 20 minutes before you slice and serve.
