    BALSAMIC DRIZZLE

    Source of Recipe

    Barbecue Bible by Steven Raichlen

    Recipe Introduction

This is so good on grilled or broiled fish, that even fish haters will smile! The cookbook author also suggests drizzling it on grilled veggies, or grilled fruit.

    List of Ingredients

1 cup good commercial balsamic vinegar
    1/3 cup honey
    1/3 cup sugar
    3 tablespoons soy sauce

    Recipe

Place all ingredients in a large, heavy, nonreactive saucepan over medium heat and bring to a boil. Simmer the mixture until reduced to 1 cup, about 15 minutes. Skim off and discard any foam that may rise to the surface. Strain the mixture into a bottle and cool to room temperature. Cork or cap the bottle. The drizzle will keep for several months at room temperature. Makes 1 cup.
